Add the carrots and celery to the pot and sauté for 3-5 minutes until they soften.

Slice the garlic thinly and add it to the pot along with the bay leaves, cumin, and red pepper flakes. Mix well.

Add the lentils, diced tomatoes, and broth to the pot and stir.

Cover and simmer for 40-45 minutes over medium to low heat.

Five minutes before the lentils are done, add the salt (adding it earlier can make the lentils tough).

When the lentils are ready, season with salt and pepper. Serve the lentils on a plate and add a little thyme, pepper, 1 tablespoon olive oil, and 1 tablespoon vinegar.
