Ingredients

20 minutes
1 serving
  • 4free range chicken breasts, cooking the whole pack to save for the next day’s lunch
  • 100 gbaby spinach, washed
  • 1/4cucumber, sliced into chunks
  • 1 blockfeta cheese
  • 1/2avocado, sliced
  • 1 pinchsalt
  • 1 pinchgarlic flakes
  • 1 tablespoonextra virgin olive oil plus extra to drizzle
  • 1 teaspoonlemon juice
  • 1 pinchpaprika
  • 1 pinchfreshly ground black pepper
  • 1/4 teaspoonchilli flakes

Steps

20 minutes
  1. 1

    Chop the chicken breasts into strips and place in a roasting dish with olive oil and spices in a preheated oven at 180 degrees C for 15 minutes

  2. 2

    Take the chicken out and set aside to cool. Using only a few strips for this recipe and setting aside the rest for the next two days’ lunch.

    To assemble, place the cleaned spinach leaves on a plate, then the cucumber, feta, avocado and chicken strips.

    Serve with a drizzle of lemon juice and olive oil. Enjoy!
