Spray 2 8x2 round cake pans with non-stick spray.

Whisk together

In a large measuring cup, combine

Add the wet ingredients to the dry mixture all at once, stirring until just combined. A few lumps are ok.

Divide batter between pans.

Bake 35-40 minutes until a toothpick inserted in the center comes clean.

Cool cakes in pan for 15 minutes. Then invert onto rack. Leave upside down and let cool completely (this flattens domed cakes).
