
Pesto quinoa with roasted veggies
Steps

Set oven to 400.

Cut vegetables into bite size pieces and toss with 2 Tbsp olive oil. Roast veggies on cookie sheet for 10-15 min or until tender.

Cook quinoa in chicken broth as directed.

Add pesto and olive oil to quinioa and toss in veggies. Sprinkle mozzerella on top and cook in oven at 375 til cheese is melted.
