Preheat oven 200℃/400℉

Half tomatoes and peppers and scoop out seeds

Place on baking tray drizzle with oil and a little salt and pepper

Put tomato and pepper in oven for 20 minutes until softened

While veg is in the oven put couscous in a bowl cover with boiling water leave to absorb,fluff with fork,add spring onion,basil,mozzarella,parmesan and chickpeas.once soften add couscous mixture to tomato and peppers and bake for another 8-10 minutes,until warmed threw and cheese has melted.
