Chocolate Spice Cookies

I was told once that they are like molé cookies. They're chocolaty and spiced. My mother calls them redeemer cookies because one year for Thanksgiving she was tasked with making mashed potatoes and she over did it with the stick blender and turned them all grey. These were so good everyone forgot about the nasty potatoes.

Preheat oven to 350°f

Melt butter in a saucepan

Combine group 1 ingredients in a bowl and let cool 5-10 minutes.

Mix in egg

Mix in dry ingredients. Dough should be sticky and not dry.

Quickly mix in chocolate chips by hand

Hand roll cookies into 1 or 1.5 inch balls and place on cookie sheet

Bake 6.5 minutes

Let cool on rack for four minutes before removing.

Tip: for consistent cookies refrigerate dough while waiting to bake next batch. This will slow the baking soda down.
