Add vinegar, water, salt, garlic, peppercorns and honey to medium saucepan.

Place over medium heat.

Bring to a boil, reduce heat and keep to a simmer.

Prepare the jalapeños:

Wearing gloves, slide jalapeños into 1/4 inch rings.

Add rings to brine and bring back to boil.

Pour into hot jars and seal.
