Ingredients

4 servings

1/2Bell Pepper, diced
1/4 cupHot Peppers, diced (i.e. jalapeno) (optional)
4Green Onions, chopped
1/2 cupCorn
15 ozKidney Beans, drained and rinsed
1 tbspTaco Seasoning
1/2 cupCornmeal
1/3 cupWater

Preheat oven to 375°F. Line a baking sheet with parchment paper.

Mash kidney beans with a fork.
Mix beans and remaining ingredients together in a bowl. Cover the bowl and chill for 15-20
minutes.

Shape into 4 patties and bake for 15 minutes. Gently flip them over with a spatula and bake for an additional 15 minutes. Let cool for several minutes.
