Preheat oven to 180℃

Line baking tray with baking paper.

Butterfly or flatten the chicken breasts.

Spread the honey & mustard. Place thyme sprigs in the middle of the breast allowing some of the leaves to hang out.

Roll up & secure with kitchen twine or toothpicks.

Place on baking tray, season with salt & pepper, and bake for 20 mins basting halfway through.
