Super simple AND healthy. A weekly standard in my house.
Steps

Slice your pepper and sausage. Set aside

Clean cauliflower, trim off leaves, and grate with a cheese grater over a medium bowl. I usually stop when I hit the stemmy parts.

Add peppers, grated cauliflower, soy sauce and garlic powder to a wok on medium heat (mine is non stick so I don't use any oil, but plan accordingly depending on your cookware)

Cook for about 5 minutes stirring occasionally. Add sausage to wok for an additional 5 minutes.

Ta-Da! All done
