  1. Ingredients:
  2. 8Quorn chicken-style fillets
  3. 100 gramshalloumi
  4. 2red or yellow peppers
  5. 1 packagessalad leaves
  6. 150 gramsbaby plum tomatoes
  7. 1salt & pepper to tase
  8. For the marinade
  9. 8 tbspgreen pesto
  10. 50 mlolive oil
  11. 1 clovechopped garlic
  12. 1 tspmustard
  13. 1salt & pepper to taste

    Defrost the Quorn if required. Mix ingredients for the marinade in a bowl, and add the quorn. Leave for up to two hours in the fridge, covered with cling film.

  2. 2

    Chop the peppers finely into thin slices, and sear in a hot pan until slightly blackened with a little olive oil. Leave to cool.

  3. 3

    Chop the halloumi into bite sized cubes, and fry with oil in a large pan until golden on all sides. Leave to cool.

  4. 4

    Grill the marinaded Quorn in a very hot pan until all the remaining liquid is aborbed, and the fillets are cooked thorough. Chop roughly into even pieces, and leave to cool.

  5. 5

    Chop the tomatoes in half lengthwise.

  6. 6

    Mix all the ingredients in a large bowl, then eat!
