Cooking Instructions

Prepare all your fresh ingrediants so you are well prepared.

Bring stock the boil and add cornflour solution a quarter at a time. REMEMBER only add cornflour when stock is boiling

In a seperate pan fry off the meat you have chosen. add chillies, ginger and garlic
- 4
when stock has thickened stir in your thai paste.Then add everything to the stock.

Turn down to a rolling boil and reduce by a third.
- 6
Serve with jasmin rice, fresh corriander and crushed peanuts sprinkled over the top

I made this curry very often and tried to perfect it. I like this balance of ingredients, but you can adjust to your liking. More curry paste for more spice, more coconut milk for a softer taste. My girlfriend cant take it when food is too spicy and I like spicy, but this balance is perfect for both of us. Pick a good curry paste, some are without additives with only fresh herbs. I make this every year, so I decided to make a recipe for it. I make this dish whenever I'm not feeling well or want more energy.If you can't find shrimp paste, add one teaspoon of fish sauce instead. This dish is spicy, so it is not recommended for children. Be careful not to let the curry boil for too long as the components of coconut milk will break apart and the oil will float to the top, which will compromise the flavor.
