Ingredients

  1. 350 gramsself raising flour
  2. 175 gramsunsalted butter
  3. 150 gramscaster sugar
  4. 2 mediumeggs, beaten
  5. 2 largeapples, peeled and diced.
  6. 150 gramsblueberries
  7. 150 gramsblackberries
  8. 45 mldemerara sugar
  9. 75 gramschopped nuts

    Preheat the oven to gas mark 5 and grease and line a 20cmx24cm tin.

  2. 2

    Sift the flour in a large bowl and add the butter and rub into the flour to make breadcrumbs.

  3. 3

    Remove 175g of the crumble mixture to another bowl and set aside.

  4. 4

    Stir in the caster sugar and beaten eggs to the larger amount to make a soft sticky dough.

  5. 5

    Press evenly into the tin using floured hands and scatter the diced apple and berries on top.

  6. 6

    Stir the demerara sugar and nuts into the remaining crumble and spoon over the fruit pressing down gently.

  7. 7

    Bake for about 35-45 mins on a hot baking sheet (covering loosely with foil after 20mins).

  8. 8

    Bake until golden and remove from oven. Allow to cool for 20mins and serve.
