Combine Dumpling mixture, set aside.

Heat med. soup pot over med. heat. Begin to chop veggies; dice carrots into 1/4" pieces, chop celery & onion. Add EVOO to hot pot & carrots.Turn carrots tocoat them in oil & add celery & onion as they are chopped. Season veggies with salt & pepper & bay leaf. Stir veggies & cook 5 min to begin to soften. Do not let veggies brown, reduce heat if necessary. Add wine, cook 1 min. Add beans, tomatoes & stock to pot. Put lid on pot & when soup boils, about 3 min., add dumplings. Stir in noodles. Simmer 6 min.
