Preheat oven to 275°F and line a large baking sheet with wax paper. Spray the wax paper with. Non-stick cooking spray.

In a medium sized bowl, whisk egg white until white and fluffy.

To the whisked egg white, add brown sugar, vanilla, and ground cinnamon. Whisk together until combined.

Add pecans to the egg white mixture and mix until the pecans are evenly coated.

Pour out pecans onto prepared baking sheet.

Bake pecans for about 25-30 minutes or until brown.

Once pecans are baked, let me sit about 30-45 minutes to allow the coating to full absorb.

Enjoy pecans warm and keep leftovers in an airtight container.
