Ingredients

  • 5 sliceBacon cut into small pieces
  • 1 cupOnion, chopped medium
  • 2 tbspJalapeños, finely chopped
  • 2 cupTomatoes, chopped medium
  • 1 cloveFresh garlic, minced
  • 1 pinchSalt
  • 1 dashBlack Pepper
  • 3 cupWater
  • 2Beef bullion cubes
  • 416 oz. cans of Black-Eyed peas
  • 3 cupCheddar or Swiss Cheese, grated

Steps

  1. 1

    In a saucepan, sauté the bacon until lightly browned

  2. 2

    Sauté onions, jalapeños, tomatoes, garlic, salt and pepper in the bacon and bacon drippings.

  3. 3

    Add the water.

  4. 4

    Dissolve the beef bullion cubes in the mixture.

  5. 5

    Drain juice from the peas and add the peas to the soup.

  6. 6

    Add the cheese of your choice and simmer until the cheese is melted.
