Heat oven to 400

Place each breast between 2 sheets of wax paper and pound until 1/2 inch thick, then season with salt and pepper.

Using 3 plates, 1 for flour, 1 for eggs and 1 for breadcrumbs. dredge chicken in flour, then egg and finally roll in breadcrumbs.

Heat large skillet and add olive oil.

Saute breasts for 2 minutes on each side.

Remove to a sheet pan and place in oven for about 8 minutes.
