Ingredients

  1. Dry
  2. 1 cupyellow corn meal
  3. 1 cupflour
  4. 1/2 cupsugar
  5. 1 tbspbaking powder
  6. 1 tspsalt
  7. Wet
  8. 2eggs
  9. 1 cupmilk
  10. 1/4 cuphoney (heaping)
  11. Final
  12. 1/2 stickmelted butter

  1. 1

    Preheat oven to 400°F.

  2. 2

    In large bowl, mix dry ingredients thoroughly.

  3. 3

    In separate bowl, mix together wet ingredients.

  4. 4

    Pour wet ingredients into dry and mix well.

  5. 5

    Mix in melted butter.

  6. 6

    Pour into muffin tin and bake for 15 minutes, or until golden and firm. Makes 1 dozen muffins.
