Broccoli Cheddar Soup

My daughter made this soup for us one day and it was a big hit. She found this recipe on-line somewhere. It is a thick soup, but you can add more chicken broth and milk if you prefer a thinner consistency. I omit the salt as there is enough in the chicken broth and the cheese. If you don't have swiss cheese, it is also good with just the cheddar cheese!

Ingredients

4 servings
  1. 1 3/4 cupschicken broth
  2. 1small onion diced
  3. 1/3 cupall purpose flour
  4. 1/4 cup (4 Tbsp)butter
  5. 1/2 tsppepper
  6. 1/2 tspsalt
  7. 2 cupsmilk
  8. 1 1/2 cupsshredded cheddar cheese, sharp or extra sharp
  9. 1/2 cupshredded swiss cheese
  10. 2 1/2-3 cupschopped, lightly steamed or blanched broccoli

Cooking Instructions

    Simmer chicken broth and onion for 15 to 20 minutes in a covered small saucepan, until onions are soft.

    Put the broccoli in a large glass bowl with a Tbsp of water and cover with saran wrap. Microwave for 3 to 5 minutes.

    Heat milk in microwave for 1 to 2 minutes.

    In a separate medium sized stockpot, melt butter, then add flour, salt and pepper. Cook together, stirring constantly for 2 minutes, then whisk in warmed milk. Stir and heat together on medium heat until mixture starts to thicken.

    Add warmed chicken broth to mixture and stir until well blended. Add cheeses and stir until completely melted. Stir in steamed broccoli and serve.
