Steps

Start by brining chicken 4-24 hours ahead of time with 1 cup kosher salt, cup of sugar, Tbsp paprika,Tbsp of cumin, garlic powder, black pepper.

Add ingredients with 4 quarts water to big pot and refrigerate.

After desired time has passed, take chicken out and pat dry.

preheat oven to 425

Use olive oil and remaining spices, plus allspice and rub all over the chicken.

stuff cut up white onion and 21 garlic cloves into cavity. I mash half the cloves with a knife edge.

lay remaining onion in pan around chicken.

tie legs of chicken together

Add a little water in the bottom of the pan

create cover for chicken using foil

Bake at 425 for 20 minutes

Turn oven down to 375

bake for an hour

Remove foil. Bake until skin is brown and crispy.

Remove from oven. Let rest 20 minutes before carving.
