Ingredients

6 servings
  1. 3Carrots, thinly sliced
  2. 1Yellow bell pepper, thinly sliced
  3. 1Red bell pepper, thinly sliced
  4. 1Onion, thinly sliced
  5. 1Squash, thinly sliced
  6. 2 mediumzucchini or 1 large, thinly sliced
  7. 15Cherry tomatoes, halved
  8. 1Salt and pepper
  9. 1Freshly grated Parmesan
  10. 1 lbBow tie pasta
  11. 1 tbspItalian herbs

Steps

  1. 1

    Put the carrots, peppers, onion, squash and zucchini onto a baking sheet and coat in olive oil. Season with pepper and salt as well as a tablespoon of Italian herbs.

  2. 2

    Once mixed put half the veggies on another baking sheet. Put in oven for 10 mins. Take out of oven and toss again. Cook for an additional 20 mins

  3. 3

    Meanwhile cook the bow tie pasta for 8 mins or until al dente

  4. 4

    Toss the veggies with the pasta and top with Parmesan.
