A delicious meal that always saves me in a pinch because I can serve it with rice, make tacos or tostadas, and it really goes a long way. I always used to make it with just beef, but today I tried a mix! It turned out great.

A delicious meal that always saves me in a pinch because I can serve it with rice, make tacos or tostadas, and it really goes a long way. I always used to make it with just beef, but today I tried a mix! It turned out great.

Cut the vegetables into small cubes. If you don't have peas, it still turns out delicious!

Sauté the meat.

Once the meat is browned, season and add the onion and garlic.

Blend the cooked tomatoes with the chipotle pepper and cilantro. Add the carrots and the sauce to the pan.

After it comes to a boil, add the potato, then the zucchini and bay leaf. Adjust the seasoning, let it simmer for about 5 minutes, and it's ready.

Serve with rice.

Serve in tacos with cabbage.
