Ingredients

  1. 1/2 cupground allspice
  2. 1/2 cuppacked brown sugar
  3. 6garlic cloves
  4. 4scotch bonnet peppers
  5. 1 tbspground thyme or
  6. 3 tbspfresh thyme leaves
  7. 2 bunchgreen onions/greens included trimmed and chopped
  8. 1 tspground cinnamon
  9. 1/2 tspground nutmeg
  10. 2 tspkosher salt
  11. 2 tbspsoy salt to moisten

Steps

  1. 1

    Place all ingredients in a processor and blend until smooth.

  2. 2

    USE GLOVES WHEN HANDLING SCOTCH BONNETS.

  3. 3

    USE GLOVES WHEN APPLYING.

  4. 4

    Apply on any meat and refrigerate 4 hr. to overnight.

  5. 5

    Allow meat to return to room temperature before cooking !
