Ingredients

  1. 1 TbspOlive Oil
  2. 2large white onions
  3. 1/4 tspsalt
  4. 12corn tortillas
  5. 3 cupsshredded jack cheese
  6. 1 packagefrozen chopped spinach (thawed)
  7. 2green onions (chives)
  8. 1 candiced green chili peppers
  9. 1 cupcream of mushroom soup
  10. 1 cupsour cream

  1. 1

    Heat oil over medium heat.

  2. 2

    Chop onions and add to pan. Sauté until soft. Set aside

  3. 3

    Distribute 2 TBSP of sautéed onions and 2 Tbsp cheese into each tortilla. Roll to enclose And place seam side down into greased 9x13 baking pan

  4. 4

    In another bowl, squeeze spinach to remove excess water (I usually do this against the sides in colander)

  5. 5

    Add spinach to blender and puree with green onions, chili peppers, soup, and sour cream until smooth.

  6. 6

    Pour mixture over rolled and stuffed tortillas

  7. 7

    Top with remaining cheese evenly

  8. 8

    Bake, uncovered at 350 F for 30 minutes
