Mothers' cheesepie
My Mother has made this for years and so have I.

Preheat oven to 350°. In a large mixing bowl, beat the cream cheese until fluffy. Add 2eggs, 1at a time, beating well after each. Blend in 1/2C sugar and lemon juice.

Put mixture into pie crust and bake on a cookie sheet for 20-25 minutes, until firm. While baking, in a small bowl, mix sour cream, 3 tsp sugar and vanilla together until blended. Set aside.

Remove pie from oven and spread the sour cream mixture on top, making a layer. Put back in the oven and bake for 8 more minutes. Cool and then refrigerate for 4 hours.

I use the pre-made Graham cracker crust or Oreo crust if in a hurry. Mother always makes her crust with wafers she crushes up.
