A favorite... Unbeatable... Perfect as a side for grilled meats...

Wash the cucumbers well and grate them with the skin on using the coarse side of a grater.

Sprinkle the grated cucumber with salt and mix gently. This helps the cucumber release its liquid.

Squeeze the cucumber by hand to remove as much liquid as possible. This is one of the secrets to great tzatziki—the more liquid you remove, the better the texture will be!

Peel and grate the garlic, then add it to the cucumber. Mix well.

Add the yogurt and olive oil, and stir everything together thoroughly.

Taste and adjust the salt, garlic, or olive oil to your preference.

Serve with a drizzle of fresh olive oil and some olives!
