Ingredients

  1. 500 gramspork belly with skin still on
  2. 2 tbspfish sauce
  3. 3 tbspwhite sugar
  4. 1 tbspwater
  5. 2garlic clove, crushed & finely chopped
  6. 1/2 tspblack pepper

    Wash the belly with salty water & dry with kitchen towel. Slide pork belly into thin rectangular vertically.

    In a small bowl, mix fish sauce + sugar + water together. Doesn't need to be completely dissolved.

    Place pork belly slices on a frying pan.

  4. 4

    Put the pan onto stove, turn the heat on high. Without adding any excess oil. Leave the pan for 3 mins, afterwards you can see steam coming out from your pan.

    Let the fat sizzles and let the pan sits on heated stove for 3 more mins, until the bottom of belly starts to turn golden. Flip all over.

  6. 6

    Wait for 5 more mins until the other sides turn golden too. Put all the garlic in, give it another stir until the garlic start to be aromatic.

  7. 7

    Pour all the fish sauce mixture into the pan. Give it a quick and even stir. At first, you can see the water in the fish sauxe mix boil and evaporate very quickly while the sugar starts to caramelize.

    Wait for 5 more mins. or more with flipping the pork bellg from side to side for even browning. Until you achieve golden brown shiny slices of pork belly slices. The water should almost all evaporated, just a little sauce left, enough to coat the outside of every slices.

    Lastly, sprinkle black pepper on top.
