Spicy Garbanzo Mint Salad

Where I live there is abundant greenery. It's getting hot and herbs are growing everywhere. I picked mint and made mint water. And added some to this salad. That makes me feel summer is just around the corner. One of my friends sprinkled parmesan cheese on it. Mmmm.. Enjoy with it or without it!

Rinse and drain Garbanzo. Cut tomato, onion, zucchini and bell pepper. Put them in a mixing bowl.

Rinse mint leaves well, pat them dry and chop. Add to the bowl along with lemon juice and salsa.

Combine well and add salt and pepper if needed. Put in fridge and allow the flavour to blend until ready to serve.
