Ingredients

  • 2 cupslentils (about 400 grams)
  • 2 cupsshort-grain rice (about 400 grams)
  • 1/2 cupvermicelli noodles (about 50 grams)
  • 1/2 cupcooked chickpeas (about 85 grams)
  • 5onions, sliced
  • 9 ouncessmall pasta, cooked (about 250 grams)
  • 1tomato, chopped
  • 1/2 cupvegetable oil (about 120 ml)
  • 1garlic clove, minced
  • 1/2 teaspoonground cumin
  • 1/2 teaspoonground cinnamon
  • 2 tablespoonshot chili powder or crushed red pepper
  • Salt and black pepper to taste

    Cook the lentils with cumin and cinnamon in water until tender.

  2. 2

    In another pot, sauté the vermicelli in oil until lightly golden. Add the rice and stir constantly until it turns golden. Add the cooked lentils with their cooking water to the rice and vermicelli. Cook over low heat until done.

    In another pot, fry the onions until they are brown and crispy, then drain from the oil.

  4. 4

    To make the spicy sauce, mash 1/4 of an onion with 1 garlic clove and sauté in a little oil.

  5. 5

    Add the tomato, tomato sauce, chili powder, a little cumin, and 1 1/2 cups water (about 360 ml). Let it simmer until thickened.

  6. 6

    To serve, layer the koshari (rice, lentils, and vermicelli) first, then add the pasta and chickpeas, and top with the fried onions.
