Another quick lunch box idea.. Macaroni with the goodness of vegetables. Children love it! Fast to cook, Good to eat at lunch time.
Steps

Boil Macaroni with a little salt (don’t over cook). Strain the macaroni and run it under cold water, so that it doesn’t cook further, and become soggy. Drain the water, and apply a little oil and keep aside.

Heat butter in a pan, add finely chopped garlic, stir fry for a minute..

Add finely chopped onions, carrots (beans also if you have) and stir fry for another 2 minutes on high heat.

Add chopped capsicum, fry till the capsicum is just about tender and crispy. And Spinach leaves. Stir fry. (You can add cabbage also)

Add the boiled Macaroni, salt and pepper as per taste, and soya sauce. Mix well and Stir fry for 2-3 minutes. Check the seasonings. If you wish you can add chilli sauce also.

Remove into a serving dish/ lunch box. Garnish with spring onions.
