These bread cups are actually a creative way to make individual veggie "quiches". They use light, extra fiber bread for the crust and are packed with colorful vegetables and low-fat cheese. They're great for breakfast, brunch or as appetizers.

These bread cups are actually a creative way to make individual veggie "quiches". They use light, extra fiber bread for the crust and are packed with colorful vegetables and low-fat cheese. They're great for breakfast, brunch or as appetizers.

Preheat oven at 350 Degrees.

Flatten Bread slices with rolling pin and spread tomato ketchup on it.Grease muffin pan and place these slices in it.

In another bowl mix rest of the ingredients and fill this stuffing into bread.

Bake it for 15-20 minutes and your bread cups are ready. Serve hot in breakfast or as an evening snack with hot tea.
