Ingredients

  • 500 gBaby Potaoes
  • 2each Asooorted Bell Pepper
  • 3Turnips
  • 4Carrots
  • 250 gBaby Maize Cobs
  • 1 bunchRosemary Leaves
  • 4Onion
  • 8Garlic Cloves
  • 2tblspn Honey
  • 1/2 teaspooncayenne pepper
  • 100 mlOlive Oil
  • 10 gMustard Seeds
  • 1/2Lemon Zest and Juice
  • Salt and Pepper

Steps

  1. 1

    Wash the baby potatoes well and blanch them for around 15-20mins

  2. 2

    Cut all the other veggies into large jullienes then roast them in a hot pan for about 10mins

  3. 3

    Mix the baby tomatoes and all the roast veggies together in a baking tray put the honey, olive oil, salt and pepper then put them to cook in the oven while turning them frequently till roasted and golden in colour

  4. 4

    When done sprinkle with juice and the zest and mix well
