Ingredients

10x8 pan
  1. 4large eggs
  2. 2 cupssugar
  3. 1 cupcanola oil
  4. 2 cupsall purpose flour
  5. 2-3 tspground cinnamon
  6. 3/4 tspbaking soda
  7. 1/2 tspbaking powder
  8. 1/4 tspsalt
  9. 1/4 tspnutmeg
  10. 3 cupsgraded carrots
  11. frosting
  12. 1/2 cupbutter-softened
  13. 3 oz.Cream cheese-softened
  14. 1 tspvanilla extract
  15. 3-3/4 cupssugar
  16. 2-3 tbsp2% milk
  17. 1 cupchopped nuts. (Optional)

Steps

  1. 1

    In a large bowl combine eggs, sugar, and oil. Combine the flour, cinnamon, baking soda, baking powder, salt,and nutmeg. Beat into egg mixture. Stir in the carrots.

  2. 2

    Pour into 2 greased and floured 9in.cakes pans. Bake at 350° for 35-40 min or until a toothpick comes out clean. Cool 10mi before removingfrom the pans to sit on wire racks for cooling.

under the frosting it simply says sugar it should be powder sugar if I a not mistaken
