Ingredients

  • Vegetables (ex:carrot,lettuce,bean sprout,tomato,cucumber etc)
  • Boiled potato
  • Rice cake (lontong)
  • Hard boiled egg
  • Fried tofu
  • Fried tempeh
  • Tapioca crackers (krupuk)
  • Peanut Sauce Dressing
  • 6garlic cloves
  • 1 tbschili powder or paprika powder
  • 1-2 tsptamarind paste or to taste
  • 100 grcoconut sugar
  • 2 tspsalt
  • 2 tbssugar
  • to tasteGround white pepper
  • 150 grnatural peanut butter (no salt/sugar added)
  • 500 mlcoconut milk
  • 100 mlwater
  • Note :
  • If you don't have peanut butter, use 200 gr ground fried peanut
  • If you don't have coconut sugar, use granulated sugar

Steps

    Cut/slice the vegetables as you like. Set aside.

  2. 2

    Cut the remaining ingredients (potato, rice cake, egg, tofu, tempe) as you like.

  3. 3

    How to make Peanut Sauce Dressing : fry the garlic clove until golden brown.

  4. 4

    Put fried garlic, chili powder, peanut butter, coconut milk and water in the blender. Blend all together until smooth.

  5. 5

    Pour it into a sauce pan. Cook over medium heat.

  6. 6

    Add coconut sugar, salt and sugar.

  7. 7

    Stir until it bubbles. Add tamarind paste.

  8. 8

    Keep stirring it until it boils hard and looks oily. If it hasn't looked oily, keep stirring it and lower the heat down. Make sure to taste it and add sugar/salt/tamarind if needed.

  9. 9

    When the peanut sauce is ready, cool it down.

  10. 10

    How to serve : Put veggies and everything else, except the crackers, onto a serving plate. Drizzle the peanut sauce as much as you like 😊. Put the crackers on top. Enjoy. (The best way to eat it is to mix everything all together).
