In a pan,heat ghee and add grated bottlegourd.cook for 4-5 mins on sim.Add milk,few drops of green essence and let it simmer.lastly add sugar.Cook till thick and nice creamy.

Again in a pan,add carrot and milk.cook till sugar is dissolved and it mix nicely and milk becomes thick and creamy.add pinch of colour along with it.

Soak rice for half an hour before cooking.In another pan,put milk and soaked rice.Cook it till rice are done,sugar is dissolved and milk becomes thick and creamy.

Assemble them in glass or bowl one by one making layers.First layer of thick green bottle gourd kheer.garnish with some nuts.

2nd layer of thick white kheer with some nuts again.

3rd layer of thick carrot kheer again topped with some nuts.
