Red pesto & salmon gnocchi

This is one of those special occasion dishes I think, the sort which might cost a little more but is still kind to your budget & big on flavour!
I use frozen salmon fillets unless I spot a bargain & all the other ingredients can easily be found in supermarkets.

This is one of those special occasion dishes I think, the sort which might cost a little more but is still kind to your budget & big on flavour!
I use frozen salmon fillets unless I spot a bargain & all the other ingredients can easily be found in supermarkets.
Steps

Pre-heat the oven to 180Fan/200C/Gas6
Cook the gnocchi following pack instructions. Drain & set aside.
In a bowl mix together the pesto & cream cheese.
Take 2/3 of the pesto mixture & add it to the gnocchi, mix gently & transfer to an ovenproof dish. - 2
Lay the salmon fillets on top of the gnocchi. Spread the remaining pesto mixture on top of the salmon.Place in the oven for 15 minutes.
Serve with a green salad or veg. It works particularly well with watercress!
