This is a good way to use up a glut of garden tomatoes. It can be a vegetarian main course or a simple starter.

This is a good way to use up a glut of garden tomatoes. It can be a vegetarian main course or a simple starter.
Steps

Unroll flaky pastry and place on a baking tray (you can leave it on the oven proof paper) and prick all over with a fork.

Spread the sundried tomato paste all over the pastry.

Slice the tomatoes and arrange them in overlapping lines down the length of the pastry.

Drizzle with olive oil and season with salt and pepper.

Sprinkle the parmesan and thyme over the top of the tomatoes.

Place in the oven at 200 degrees and bake for approximately 25 minutes. (You may need to take it out a bit earlier so keep checking).

Serve with a mixed salad and new potatoes as a main course or with dressed rocket as a starter.

You could add anchovies or olives for a twist.
