Ingredients

  • 1 cupsabudana (tapioca pearls) (about 150 grams)
  • 1/2 cupcoarsely ground peanuts (about 65 grams)
  • 1finely chopped green chili
  • as neededChopped fresh cilantro
  • 2boiled potatoes
  • 1 teaspoonlemon juice
  • 1 teaspoongaram masala
  • 1 tablespoonoil
  • Black salt or sendha namak (rock salt), to taste

Steps

    Soak the sabudana (tapioca pearls) in enough water to just cover them for 4 hours. Once they are soft and have absorbed the water, drain any excess. Add all the ingredients except the oil and knead into a dough-like mixture. Mix in the boiled potatoes as well.

    Shape the mixture into flat patties.

    Heat a skillet and add a little oil. Place the vadas on the skillet. When one side is crispy, brush a little oil on the other side and flip. Cook until both sides are golden and crispy. Serve hot with chutney.
