Crush garlic, salt and chilli powder in a mortar pestle

Dry roast crushed peanuts and Bengal gram flour for 2 minutes. Once cool add this to crushed garlic mix. Add coriander cumin powder, garam masala and sugar as per taste. Add chopped coriander and 1 tsp oil. Mix all the masala for stuffing. Without adding coriander this masala can be saved in fridge for a month.

Cut Brinjals into 4 slits. Stuff it with this masala.

Cut potato into big long chunks.

In a pan add oil. Add asafoetida and stir fry Brinjals in it. Add potatoes and stir it for a while.

Now add the remaining masala to it and let it cook on slow flame for 4-5 minutes.

Add 1/2 cup of water to it and cook it on slow medium flame until cooked.
