Steps

Wash, peel and chop beetroots. Grind them to a smooth paste in a mixer. Add little milk to aid in grinding.

In a pan, pour the beetroot purée. Add the milk and let it reduce down to half the original amount. Colour of the beetroot will also change from it’s purple shade to a light brown.

Once the milk reduces and original beetroot colour comes back, add the sugar cup by cup. Stir until it dissolves well.

After sugar dissolves, add ghee mix well. Wait until it separates from the pan. Add the cardamom powder & chopped cashews and mix. Serve hot by itself or with icecream.
