Add 2.5 ltrs Water to a Big Pan

Cut Oranges in Half and juice them, getting pulp and placing into a muslin cloth tied to the side of pan and placing in with water and juice from orange.

Cut Lemon in half squeeze juice out and add to pan, chop up your orange peels into thin strips and add to pan..... bring pan to a boil, then simmer for roughly 2 hours...after 2 hours check peels are soft by pressing between thumb and ginger so this breaks in half

After the 2 hours add 2kg off jamming sugar stirring it in so it disolves then add your finnally chopped 2 chillis then bring to a rolling boil for about 15 minutes.......check on a cold plate with a spoon of marmalade on it for consistancy....if it is forming together and not watery then its done and you can jar up.
