Ingredients

15 minutes including prep time.
4 servings
  1. 2large courgettes from my garden
  2. Mushrooms
  3. Onion
  4. 1garlic clove
  5. Red Pepper
  6. Soy sauce
  7. Rice noodles

Steps

15 minutes including prep time.
  1. 1

    Fry an onion in some olive oil until soft. Add the other vegetables chopped.

  2. 2

    Cook on medium heat for 10 minutes. Stir occasionally to stop sticking and to cook evenly.

  3. 3

    Bring a pan of water to boil and add rice noodles. Simmer for a few minutes until soft. Strain.

  4. 4

    Serve the noodles with the vegetables on top.

  5. 5
