Chicken/fish jollof with vegetables

So I thought of eating healthy without frying my tomatoes and came up with this👆
.... also I sliced my vegetables into uneven shapes just for a change and used it to garnish my jollof rice without salad 🥗 cream. Guess what and the taste is soooo yummilicious😋

So I thought of eating healthy without frying my tomatoes and came up with this👆

Steps

Wash chicken and add seasoning cubes, spices with salt and cook for 25 mins add washed fish and cook for another 5 mins

Grill chicken and fish in oven to taste

Wash and blend tomato and pepper set aside
- 4
Boil tomato and pepper until the water drys mix with sachet tomato
- 5
Per boil and wash rice

Pour blended tomato and pepper inside pot and add a little soya oil, cover pot and cook for about 3mins

Pour stock from chicken and fish, mix grated ginger, garlic and turmeric with seasoning,a little salt and add water and stir

Allow to simmer for 10mins, add per boiled rice and stir. Add water a little above the rice level and Taste for salt, cover and allow to cook.

Be checking for water until the rice is well cooked and dry

Wash all the vegetables with lemon water and cut to desired shapes

Garnish your jollof rice with chicken, fish and vegetables
