Preparation
Mix milk and one teaspoon milk and rub it in milk powder until it resembles bread crumbs.
Coarsely powder the pistachios in a grinder. - 2

Mix the flour ,ghee and milk and make a soft dough. Leave it aside covered for 15-20 minutes.

In a pan add 1 tablespoon ghee,roast the milk powder for 3-5 minutes till it turns light brown,
add the gram flour and roast for another minute. Add pistachio powder and cook for another 30 seconds. Add sugar and mix until the mixture leaves sides.
Let the mixture cool. Make about 10 balls.
Roll the dough in small round discs and place the filling ball in the centre and start pleating until the ball is covered with dough. - 5
In a pan heat oil and deep fry on low flame.
I fried gharis by placing each ghari on a strainer and pouring hot oil on top and fried each ghari till it turns light brown. - 6

Let the ghari cool for about 3 to 4 hours before you coat it with the ghee and sugar mixture.
To make the ghee mixture. Take ghee at room temperature add powdered sugar and beat it until its creamy.

Once the ghari have cooled place ghee mixture with a spoon on each ghari to glaze.
Garnish with pistachios or anything you like.Leave ghari for 8 to 10 hours and enjoy.
