Dice onions and fry with mushroom

Chop courgette and aubergine into even sized cubes and fry with onion and mushroom

When the veg is starting to soften mix in the tomato puree
- 4
Add in the balsamic and stir. Add in a small amount of water and simmer for 10 mins until all veg is soft and cooked. If it's running dry then add a small amount of water
