Peel the potatoes and cut into chips. Clean and let them drain or Pat dry with a clean towel.

Heat the oil in a deep pan until hot. Add in the chips and fry until crispy.

Remove from the oil and set aside.

For the chicken, boil in water until soft. Add any spices and vegetables you like. Boil further until well done.

Serve with kachumbari and sauce of your choice.
