Green grams mukimo

I love good food, well cooked, but I hardly cook since I live alone. But on rare occasions when I feel a craving, I do a great meal. Today I craved mukimo ya ndengu. I just love how it tastes. Unlike peas which somehow adds some sweetener, Ndengu has a divine taste if, you get good quality and is well cooked. I used githeri that I had in my fridge. Try this out. It's delicious.

In a pot, put 1/2 cup water

Add potatoes,then add the greens.

Sprinkle salt, I like doing it at this stage

Add the green grams and then your githeri or preboiled green Maize. NB: Don't stir anything.

Cover the pot with a lid and bring it to boil in medium heat.

After 6/8 mins, insert your cooking stick and remove to check if the water has dried up, a clean cooking stick indicates the water is dried, wet not yet.

Check the potatoes, they should be easy to mash.

Mash evenly ensuring that you get a good mix and mash everything.

Served with kachumbari, vegetables, beef stew or your favorite accompaniment.
