Wash urad daal till water runs out clear.. Soak it 4-5 hours. Drain the water and grind a smooth paste...

Batter should be fluffy and smooth, not to runny it almost look like cake batter..

After grinding beat the batter with a spoon and add salt mix very well..

Whipping the batter make soft or spongy dahi vada which absorb the tangy flavors of masala and dahi bhalla chuttny...

Now heat the oil for deep frying..flatten the top of the ball with wet fingers and toes deep slowly into the hot oil deep fry on medium heat for some time then fry low heat till golden brown..

Now add these dahi vadas in warm water in which Salt is added and allow them to soak water in 15-20 minutes..

Take out of few pieces of dahi vada from water and gently squeeze out extra water..

Place them on a small plate and add crushed papdi.. Add small cubes of boiled potato and top them whipped yogurt, tamarind chutney, green chutney...

Sprinkle salt, chat masala, cumin seeds powder, red chilli powder,sprinkle some aloo bhujiya and green chutney, tamarind chutney..

Chatpata dahi bhalla papdi chaat ready to serve...
