Boiled Ripe Plantain with Egg and Cow Skin (Kpomo) Sauce

1. Wash, peel, cut and boil the ripe Plantain. Add salt. 2. Boil the Egg. 3. Wash, cut the cow skin (Kpomo) into bits. 4. Season and steam a bit. 5. Pour groundnut oil in a pot. 6. Add the onions, fresh tomatoes and pepper.

7. Add ginger, garlic. 8. Pour the cow meat (Kpomo) sauce into the gravy. 8. Add cubes and salt to taste. 9. Add the boiled egg. 10. Allow to boil and remove. 11. Serve with the plantain.
