Cheese Puffs (No Mixer, 2 Eggs, Crunchy Without Baking Powder)

This cheese puff recipe doesn't use baking powder but still turns out crunchy. The key is to have the oven at the right temperature, and after the first 20 minutes, bake at a lower temperature so they don't burn even with longer baking times.

This recipe makes about 132 pieces, or around 136 grams, which fits in a small jar.

If you like them filled, you can fill them with melted chocolate. To do this, melt some dark cooking chocolate and fill the puffs from the bottom. However, I prefer them savory. They're great for snacking, so give them a try, friends.

Ingredients

  • 1/4 cupbutter (about 60 grams)
  • 1/4 teaspoonsalt
  • 1/2 cupwater (about 120 ml)
  • 1/2 cupall-purpose flour (about 70 grams)
  • 2eggs
  • 1/4 cupfinely grated cheddar cheese (about 30 grams)

Steps

    Prepare a saucepan, add water, salt, and butter, and bring to a full boil.

    Turn off the heat, add the flour, and stir quickly. Turn the heat back on and cook for about 2-3 minutes.

    Remove from heat, transfer to a bowl, and let cool. Beat the eggs lightly, add them one at a time, and mix with a wooden spatula until smooth.

    Add the second egg, mix well with the wooden spatula, add the grated cheese, and mix until combined.

    Prepare a piping bag with a nozzle. Place the dough into the piping bag (it's easier if you place the bag in a glass, then pull the plastic up when full to avoid mess).

    Prepare a baking sheet, grease it lightly with butter. Pipe small dollops of dough (about the size of a marble) onto the baking sheet.

    Preheat the oven ten minutes beforehand to 390°F (200°C), bake for 20 minutes. Lower the temperature to 320°F (160°C) and bake for 10 minutes, then lower it again to 265°F (130°C) and bake until completely dry, about 30 minutes (adjust according to your oven's temperature).

    Tips: When baking, the oven must be really hot, 390°F (200°C). Do not open the oven in the first 20 minutes, or they might collapse.
    If you like, you can fill them with melted chocolate by making a hole in the bottom of the puff and filling it with melted chocolate.
    Store in an airtight container to keep them crunchy.
